The 2021 bottling is a complex, six-varietal assembly composed of 35% Mourvèdre, 26% Grenache, 23% Syrah, 7% Vaccarèse, 5% Cinsaut, and 4% Counoise. Sourced entirely from the estate's certified organic and biodynamic vineyard in the Adelaida District, the vines are propagated from cuttings originally imported from Château de Beaucastel. The dominance of Mourvèdre provides the structural backbone and earthy depth, while Grenache adds fleshiness, Syrah contributes mineral tension, and the minor varietals offer high-toned spice and acidity.
The 2021 vintage in Paso Robles is widely regarded as a "blockbuster" year, characterized by a dry, chilly winter and a single intense rainstorm in January that set the stage for low yields and small berry size. A moderate growing season with cool nights allowed for extended hang time, resulting in fruit with rare concentration and the highest average acidity levels seen at the estate in a decade.
