This wine is a pure, single-varietal expression of 100% Savagnin, the signature white grape of the Jura region in eastern France. Unlike the region's famous Vin Jaune, which is aged under a veil of yeast, this specific cuvée is produced in the "ouillé" style, meaning the barrels are kept topped up throughout aging to prevent oxidation. This approach allows the true varietal character of the grape to shine without the nutty, oxidative influence of the sous voile method. The fruit is sourced primarily from the estate's vineyards in Montigny-lès-Arsures, specifically the "Gaillard" and "Château Gimont" parcels, which are revered for their mineral-rich soils.
The 2023 vintage in the Jura was characterized by a warm growing season that delivered a generous and healthy crop, a welcome relief after the lower yields of previous years. The summer warmth ensured excellent phenolic ripeness, giving the wine a lush fruit core, while the region's cool nights helped retain the electric acidity that is the hallmark of Arbois whites.
