This sophisticated sparkling wine is a pure varietal expression, composed of 100% Chardonnay sourced entirely from Virginia. As a Blanc de Blancs, it is crafted exclusively from the tête de cuvée—the first and finest pressing of the grapes—and incorporates a significant proportion of reserve wines to ensure consistency and complexity across releases. The fruit is primarily harvested from the rolling hills of the Monticello AVA and select sites in the Roanoke Valley, a region defined by its warm, humid summers and clay-loam soils. To combat the heat and preserve the critical acidity required for premium sparkling wine, the grapes are harvested early, often in late August, capturing the fresh, crisp character of the Virginia terroir.
In the glass, the wine displays a brilliant pale gold hue with a persistent, fine bead that hints at its quality. The nose is elegant and expressive, offering aromas of green apple, Asian pear, and white peach, layered with secondary notes of toasted hazelnuts, fresh brioche, and a touch of acacia flower. On the palate, this is a medium-bodied, precision-driven sparkler with a creamy mousse that balances its vibrant energy. It is technically dry (Extra Brut), with a low dosage of approximately 3-4 grams per liter, allowing flavors of lemon curd, grapefruit zest, and a distinct chalky minerality to shine through. Winemaking follows the traditional méthode champenoise, a nod to co-founder Claude Thibaut’s roots in the Champagne region of France. After a gentle whole-cluster press and fermentation in stainless steel, the wine undergoes a secondary fermentation in the bottle and is aged on its lees for over two years. This extended contact imparts the rich, autolytic textures of biscuit and dough that distinguish it from simpler sparkling wines. Farming practices are meticulous, with hand-harvesting employed to ensure the integrity of the delicate fruit.
This wine’s high acidity and clean structure make it a versatile partner for food. It pairs exceptionally well with fresh Chesapeake Bay oysters, where the wine’s salinity mirrors the brine of the shellfish. For a classic American pairing, try it with fried chicken; the bubbles and acid cut through the richness of the batter while the toasty notes complement the savory crust.
