Description
1+1=3 CYGNUS SADOR Cava Brut NATURE Reserva, Organic Sparkling Wine N/V
This expression is a quintessential representation of the Penedès region, composed of a traditional blend of 40% Xarel·lo, 30% Macabeu, and 30% Parellada. The fruit is sourced from certified organic vineyards situated in the Alt Penedès at elevations ranging from 350 to 450 meters. Here, the vines are rooted in nutrient-poor calcareous clay soils which naturally limit yields and concentrate flavors. As a non-vintage cuvée, the wine is masterfully blended to reflect a consistent house style that balances the ripeness achieved during the region's warm, dry Mediterranean summers with the fresh acidity preserved by mild winters and cooling altitude.
In the glass, the wine displays a brilliant pale straw core with greenish highlights, animated by a steady stream of ultra-fine bubbles. The nose is highly aromatic and complex, offering primary scents of Granny Smith apple, lemon verbena, and white acacia flowers. These fresh notes are elegantly intertwined with secondary characteristics of toasted brioche, rising dough, and hazelnut, a result of its maturation time. On the palate, this is a light-bodied and bone-dry sparkling wine defined by electric acidity and a refined, creamy mousse. Flavors of crisp pear, lime zest, and fennel fronds dominate, trailing into a finish marked by distinct saline minerality and a touch of savory yeast.
Produced by U MÉS U FAN TRES (1+1=3), a winery deeply committed to sustainability, this Cava is both organic and vegan. It is crafted via the Traditional Method (Champenoise), where the secondary fermentation takes place inside the bottle. To earn the "Reserva" designation, the wine undergoes extended aging on its lees for a minimum of 15 months, with some lots aging up to 24 months to enhance textural complexity. The label "Brut Nature" indicates that no sugar was added (zero dosage) after disgorgement, ensuring the final profile is a transparent reflection of the terroir.
This Cava has garnered significant critical acclaim, notably receiving 92 points from both Tim Atkin and Wine Enthusiast, with the latter bestowing upon it a "Hidden Gem" distinction. Such scores highlight its incredible value relative to its price point. For food pairings, the wine’s razor-sharp acidity makes it a perfect companion for American seafood classics. It pairs beautifully with a buttery Maine lobster roll, cutting through the richness of the mayonnaise and meat, or with Southern-style fried chicken, where the bubbles cleanse the palate of the savory batter.
