Description
1+1=3 Cygnus ALBIREO Cava Brut 2021
This vibrant Cava is a classic Penedès blend comprising 35% Xarel·lo, 35% Macabeo, and 30% Parellada. Sourced from the producer's "U Més U" estate in Font-Rubí, the fruit comes from certified organic vineyards situated in the Alt Penedès sub-zone at an elevation of approximately 350 meters. The 2021 vintage in this region was defined by a "year of contrasts," characterized by a dry growing season followed by late summer rains, resulting in lower alcohol levels and preserved acidity that emphasize the wine's fresh, aromatic profile.
In the glass, the wine pours a brilliant pale yellow with steely, greenish reflections and a steady stream of fine bubbles. The nose is expressive and clean, dominated by primary fruit aromas of Golden Delicious apple, crisp white pear, and zesty lemon curd. As it opens, subtle secondary notes emerge, revealing hints of fresh almond, fennel, and a delicate touch of brioche or pastry crust derived from its time on the lees. There is a distinct floral lift, reminiscent of white blossoms and Mediterranean herbs.
On the palate, this Cava is light-to-medium-bodied with a refreshing, creamy mousse that coats the mouth without feeling aggressive. It is technically dry (Brut), with a dosage of approximately 8.5 g/L, which provides a rounded, fruit-forward attack that balances the wine's racy acidity. Flavors of lime zest, green apple, and white peach are prominent, supported by a backbone of stony minerality. The finish is clean, pithy, and medium in length, leaving a lingering sensation of citrus and fresh yeast.
U Més U (formerly known as 1+1=3) is a pioneer in sustainable viticulture, and this wine is both certified organic and vegan. The winemaking follows the traditional method (Champenoise), with each variety fermented separately in stainless steel to preserve varietal purity before blending. The wine undergoes secondary fermentation in the bottle and is aged on its lees for a minimum of 12 to 18 months, striking a balance between youthful fruit vibrancy and the complexity of autolysis.
For food pairings, this Cava's high acidity and effervescence make it an excellent match for rich, salty American comfort foods. It pairs beautifully with Southern-style fried chicken, where the bubbles cut through the crispy batter and grease while highlighting the savory spices. Alternatively, try it with a buttery Maine lobster roll; the wine's citrus notes complement the sweet shellfish, and its brioche undertones echo the toasted bun. It would also stand up well to fish tacos topped with a lime-crema slaw.
Critics have praised the Cygnus Albireo for its exceptional value and quality-to-price ratio. The 2021 vintage has garnered attention for its precision, with Wine Enthusiast awarding the Reserva bottling of this cuvée 92 points, noting its complex aromatics and "superb bouquet." It remains an affordable gem in the Cava category, offering a level of sophistication often found in much pricier sparkling wines.
