Description
Tablas Creek Mourvedre, Paso Robles '21
This exceptional bottling is composed of 100% Mourvèdre, sourced entirely from the estate’s certified organic and biodynamic vineyard in the limestone-rich Adelaida District of Paso Robles. The 2021 vintage was defined by a cold, dry winter punctuated by a single atmospheric river and a cool growing season, conditions that produced small berries with intense concentration and vibrant natural acidity. In the glass, the wine displays a deep garnet core and offers a savory, complex nose featuring aromas of bright redcurrant, saddle leather, and a distinctive, wild note of teriyaki or cured meat. On the palate, this dry, full-bodied red delivers a meaty texture with layers of dark plum, loamy earth, and crushed rocks, supported by refined tannins that lead into a lingering finish of cocoa powder. Tablas Creek, the world's first Regenerative Organic Certified® vineyard, employs a philosophy of minimal intervention, fermenting with native yeasts and aging the wine in large, neutral 1200-gallon French oak foudres to ensure the varietal's character remains obscured by new oak. This structure makes it an ideal match for rich American cuisine, pairing beautifully with slow-smoked BBQ brisket to cut through the fat, or a grilled lamb burger with mint to complement the wine's earthy gaminess. With a score of 93 points from Wine Enthusiast, this wine offers remarkable depth and value, showcasing the elegance that careful farming can coax from this often-rustic grape.
