This specific terroir, characterized by calcareous and mineral-rich clay soils, imparts a distinctive saline backbone to the wine, grounding the varietal's natural exuberance with structural elegance.
As a non-vintage cuvée, this bottling represents a consistent "house style," blending the freshness of recent harvests to maintain balance. The grapes are harvested by hand in late August or early September, significantly earlier than the estate's still wines, to preserve the razor-sharp acidity essential for high-quality sparkling wine.
