This profound white wine is a pure expression of 100% Chenin Blanc, sourced from a specific vineyard site in the Swartland's Paardeberg mountain. The vines, planted in 1987, grow in a unique geological setting where the name "Rotsbank" (meaning "Rock Shelf") is literal; the decomposed granite topsoil is incredibly shallow, ranging from 30 to 50 centimeters, before hitting an impenetrable shelf of solid rock. This extreme terroir forces the dry-farmed bush vines to root horizontally, resulting in naturally low yields and grapes with immense concentration and mineral definition.
The 2023 vintage in the Swartland was characterized by a wet winter that replenished soil reserves, followed by a cool growing season and a compressed harvest period. These conditions preserved high natural acidity and aromatic complexity, though they demanded rigorous selection in the vineyard. Winemaker Eben Sadie treats this fruit with minimal intervention to highlight its origin. The grapes were whole-bunch pressed and fermented naturally with indigenous yeasts in old oak foudres. The wine was then aged on its lees for 12 months in cask to build texture, finally being bottled without fining or filtration to maintain its integrity.
In the glass, the Rotsbank '23 displays a pristine, pale straw color with crystalline clarity and a slight green glint. The nose is intensely focused and mineral-driven, offering evocative aromas of crushed oyster shells, wet river stones, and flint, which gradually open to reveal notes of white peach, unripe pear, and dried fynbos herbs. On the palate, this is a dry, medium-bodied wine that feels coiled and energetic. It possesses a razor-sharp acidity that drives flavors of salted lemon, grapefruit pith, and tart quince across the tongue. The texture is chalky and taut, leading to a finish that is exceptionally long, saline, and savory.
Given its high acidity and saline character, this Chenin Blanc is a spectacular match for fresh seafood preparations. It pairs beautifully with pan-seared scallops served over a lemon-butter risotto, where the wine's laser-like acidity cuts through the richness of the butter while echoing the sweetness of the scallops. For a Southern-inspired pairing, serve this with blackened redfish topped with a corn and crab relish; the wine's structure stands up to the spices while its mineral notes complement the crab.
