This vibrant white wine is composed of 100% Sauvignon Blanc, sourced from the Menetou-Salon appellation in the Central Loire Valley. Often cited as the "insider's alternative" to neighboring Sancerre, this specific cuvée is drawn from vines averaging 30 years of age planted in classic Kimmeridgian marl—a limestone-rich clay studded with fossilized oyster shells (ostrea virgula). The 2023 vintage in the Loire was characterized by a warm growing season that ensured generous fruit ripening, while cool nights helped preserve the electric acidity essential to the varietal's structure. The result is a wine that perfectly captures the intersection of solar ripeness and cool-climate tension.
In the glass, the wine displays a brilliant, pale straw hue with flashes of green, indicating its freshness. In the cellar, the philosophy is one of minimal intervention to highlight the terroir. The grapes are fermented in thermoregulated stainless steel tanks to lock in primary aromatics, followed by aging on fine lees for several months. This lees contact adds weight and creaminess to the mid-palate without the masking influence of oak, preserving the wine's purity.
This wine’s high acidity and mineral depth make it a versatile partner for American cuisine. It pairs exceptionally well with Maryland-style crab cakes, where the wine's citrus notes cut through the richness of the frying and remoulade sauce.
