The 2023 vintage in Stellenbosch was characterized by a cooler growing season following a wet winter, which allowed for slow, even ripening and the preservation of vibrant natural acidity. Despite early heat spikes in January, the overall conditions favored the development of intense aromatics and concentrated fruit flavors. The resulting wine is a testament to this balance, marrying the rich, ripe fruit of the sunny climate with the structural tension provided by the region's cooling maritime influences.

Practicing sustainable farming, the team performs up to 23 separate harvest passes through the vineyard over several weeks, hand-selecting distinct bunches only when they reach perfect maturity or exhibit noble rot (botrytis). The fruit undergoes natural fermentation using indigenous yeasts in 400-liter French oak barrels. The wine is then aged for approximately 12 months in barrel (roughly 30-40% new oak) on its lees, a technique that imparts the wine's signature texture and integrates the oak spices seamlessly with the fruit.
The FMC's richness and acidity make it a versatile partner for bold cuisine. It pairs beautifully with seared sea scallops served over a corn purée, where the wine's sweetness matches the shellfish and the acidity cuts through the richness.
