Description
Dom Deux Cles JDC Blanc 2021
This wine is a sophisticated and textural white blend that redefines expectations for the Corbières region of France. Crafted by the dynamic duo Gaëlle and Florian Richter, the 2021 JDC Blanc is composed of approximately 50% Macabeu, 25% Grenache Blanc, 15% Rolle (Vermentino), and 10% Grenache Gris. Drawing inspiration from Burgundian techniques while honoring Mediterranean fruit, this cuvée balances richness with precision, making it a standout example of the Languedoc's potential for high-quality white wines.
The 2021 vintage was marked by climatic challenges, including early spring frosts that significantly reduced yields but concentrated the quality of the remaining grapes. A cooler-than-average growing season allowed for a slow ripening process, preserving exceptional acidity and aromatic freshness. The fruit is sourced from the rugged, high-altitude terroir of Fontjoncouse, where the soils are dominated by Triassic clay and limestone. This specific geological profile, combined with the area's persistent winds, imparts a distinctive mineral backbone and saline character to the final wine.
In the glass, the wine displays a brilliant, clear pale gold color with silvery glints. The nose offers a complex aromatic profile, leading with fresh notes of lemon peel, grapefruit, and crisp pear. As the wine breathes, it reveals savory undertones of green olive, lemon thyme, and chamomile, accented by a "subtle cloak of toast" and almond paste. On the palate, this is a dry, medium-bodied wine that features a wonderfully creamy and luscious texture. This richness is expertly cut by a vibrant, saline acidity, resulting in a harmonious balance and a long, refreshing finish driven by citrus zest and wet stone minerality.
Winemaking at Domaine des Deux Clés is defined by a commitment to organic and biodynamic farming principles, ensuring the vineyard ecosystem thrives. All harvesting is performed by hand to select only the pristine fruit. In the cellar, fermentation takes place using native yeasts within 228L French oak barrels. Notably, only about 10% of the oak is new, a deliberate choice that adds structure and micro-oxygenation without masking the fruit's purity. This careful élevage contributes to the wine's impressive mouthfeel and age-worthiness.
This wine's interplay of creamy texture and electric acidity makes it highly versatile for food pairings. It pairs beautifully with pan-seared scallops with a lemon-butter sauce, where the wine's citrus notes slice through the richness of the dish. For a classic American comfort pairing, serve this with a herb-roasted chicken; the wine's savory herbal nuances will complement the thyme and rosemary seasoning perfectly. It would also be an excellent companion to a Maine lobster roll, as the wine's body can stand up to the butter and mayonnaise while cleansing the palate. The quality of this vintage has been recognized with a remarkable 95-point score from Master of Wine Matthew Stubbs.
