This expressive white wine from the Languedoc is a carefully composed blend of 65% Macabeu, 15% Grenache Blanc, 10% Grenache Gris, and 10% Vermentino (Rolle). Produced by the husband-and-wife team Gaëlle and Florian Richter, the fruit is sourced from vines ranging between 11 and 44 years of age. These vineyards are located in the Vallée du Paradis within the Corbières appellation, a rugged and wild landscape that imparts significant character to the grapes.
The 2022 vintage in the region was characterized by warm and dry conditions, yielding fruit with excellent ripeness and concentration. However, the estate's high-altitude terroir—situated between 800 and 920 feet (250-280 meters) above sea level—was crucial in preserving vital acidity. The vines are planted on terraced parcels featuring Trias-era clay and limestone soils rich in bipyramidal quartz and dolomite. This unique geological makeup, combined with the cooler microclimate of the elevation, injects the wine with a distinctive, stony minerality that balances the solar intensity of the season.
In the glass, the wine presents a clear, inviting golden hue with moderate viscosity. The nose is complex and aromatic, offering primary notes of white peach, ripe pear, and lemon zest, layered with secondary nuances of dried chamomile, crushed gravel, and a hint of anise. Subtle tertiary notes of toasted almond and vanilla bean emerge from the oak aging, adding depth without overshadowing the fruit. On the palate, this is a medium-bodied, dry white wine defined by a tension between its creamy, leesy texture and a spine of electric acidity. Gaëlle and Florian Richter employ a philosophy that marries Burgundian finesse with Mediterranean power. The estate is certified organic and is actively converting to biodynamic practices, emphasizing biodiversity and soil health. Winemaking involves hand-harvesting and sequential pressing of whole clusters, followed by fermentation with indigenous yeasts. The wine is aged in 228-liter French oak barrels, only 10% of which are new, allowing for micro-oxygenation and texture development through light lees stirring (bâtonnage) without imparting excessive wood flavors.
For food pairings, this wine's combination of weight and acidity makes it highly versatile. It pairs beautifully with Cedar-Planked Salmon, where the wine's subtle oak notes echo the wood smoke while its acidity cuts through the fish's natural oils.
