Description
Dawn Chorus Sauvignon Blanc, Hawke’s Bay 2023
This vibrant white wine is a pristine expression of 100% Sauvignon Blanc, crafted as a single-varietal offering that eschews blending to highlight the pure, unmasked character of the grape. The 2023 vintage in Hawke's Bay was defined by a dramatic climatic season, including a cool growing period and the arrival of Cyclone Gabrielle in February; however, the specific microclimate of this vineyard benefited from lower rainfall and cool temperatures that preserved critical acidity. The vines are planted approximately 20 miles from the coast on a unique geological formation of shallow river silts over greywacke stone and deep, slightly saline sub-soils—remnants of a 45,000-year-old riverbed and ancient salt lake. This distinct terroir directly influences the wine's profile, imparting a savory edge that distinguishes it from other New Zealand examples.
In the glass, the wine displays a brilliant white-gold color with a subtle, youthful greenish hue at the rim. The nose is clean and focused, offering a complex bouquet of white grapefruit, passionfruit, and fresh lime, interwoven with herbal nuances of lavender bush and rosemary flowers, and a distinct saline note reminiscent of a fresh sea breeze. On the palate, this is a light-bodied, dry wine that delivers a refreshing explosion of flavor. Notes of savory citrus, lemongrass, and golden melon are underpinned by a cool, crunchy minerality and vibrant acidity. The finish is bright, clean, and sophisticated, offering a balanced experience that is less aggressive than many Marlborough counterparts.
The producer follows a philosophy of "minimal intervention, maximum intention," utilizing organic farming practices to maintain vineyard health. Grapes are harvested in the cool of the early morning to protect their delicate aromatics. In the winery, the team employs natural fermentations and allows the wine to undergo a long period of sur lie aging (resting on yeast lees), which adds necessary texture and complexity before a single filtration prior to bottling.
For food pairings, this zesty Sauvignon Blanc is highly versatile. It pairs beautifully with fresh oysters on the half shell, where the wine's inherent salinity complements the brine of the seafood perfectly. It also stands up well to a white pizza with lemon ricotta and arugula, or a grilled chicken Caesar salad, where the crisp acidity cuts through the richness of the cheese and dressing. Renowned critic James Suckling awarded this vintage 90 points, highlighting its "cool, crunchy citrus and minerally undertone," confirming its status as an exceptional value in its class.
