Description
Ciavolich Aries Pecorino 2025
Crafted from 100% Pecorino, the 2025 Ciavolich Aries hails from the rolling hills of Loreto Aprutino in Abruzzo, Italy, where clay-calcareous soils and cooling Adriatic breezes shape its distinctive terroir-driven character. The 2025 growing season was characterized by a warm, dry summer that necessitated an early harvest to preserve the grape's natural vibrancy and prevent over-ripening, resulting in optimal growing degree days for this early-ripening variety. Cultivated using strict organic farming practices, the grapes underwent a gentle pressing and cool fermentation in stainless steel tanks, followed by several months of aging on the fine lees to build mid-palate texture without the masking influence of oak. In the glass, this wine displays a luminous, pale straw-yellow hue with brilliant clarity and moderate viscosity, opening to an expressive bouquet of white peach, crushed jasmine, Meyer lemon zest, and a distinct chalky minerality. On the palate, it is strictly dry and medium-bodied, delivering a zesty core of crisp green apple and white grapefruit that is beautifully balanced by a mouth-watering acidity and a slightly saline, almond-tinged finish. This bright, textural profile makes it an exceptional companion for classic American seafood dishes, pairing beautifully with Maryland-style jumbo lump crab cakes where the wine’s sharp acidity cuts through the rich, fried exterior and sweet crab meat. It also shines alongside a buttery garlic shrimp scampi or a roasted lemon-herb chicken, as the herbal and citrus notes in the wine perfectly echo the savory seasonings and pan drippings of the poultry. While major critics are just beginning to review the newly released 2025 vintage, previous iterations have consistently earned 90-92 points from publications like Wine Enthusiast, making this an incredibly affordable, high-value gem in the Italian white wine category.
