This benchmark bottling from the Verhaeghe brothers represents the gold standard for modern Cahors, balancing the region's historic power with a polished elegance. The wine is a blend of 90% Malbec, 5% Merlot, and 5% Tannat, sourced from the estate's certified organic vineyards. The vines are rooted in a complex terroir known as "Tran," a mix of limestone scree and siliceous clay found on the estate's mid-slope terraces. The 2022 vintage was marked by significant heat and drought, conditions that naturally concentrated the fruit and thickened the skins, yet the limestone soils helped retain vital freshness in the grapes.
In the glass, the wine displays a formidable, opaque inky-purple color that stains the sides of the vessel, indicating high extraction and viscosity. The nose is expansive and complex, leading with intense aromas of crushed blackberry, black plum, and wild blueberry. As it opens, evocative secondary notes emerge, including graphite, cedar, dried violet, and a distinct cooling menthol or eucalyptus lift often found in the estate's wines. Farming at Château du Cèdre is strictly organic, with a philosophy of minimal intervention to allow the terroir to speak. Following a manual harvest, the grapes were destemmed and underwent a long, 30-day maceration with indigenous yeasts to extract color and tannin gently. The wine was then aged for approximately 20 to 22 months in a combination of large oak casks (foudres) and French oak barrels (roughly 25% new). This extended aging period in mixed wood formats allows for micro-oxygenation, softening the powerful Malbec tannins without overwhelming the fruit with oak flavors. The wine is bottled unfined and unfiltered.
Given its robust structure and tannic backbone, this Malbec requires protein-rich dishes to shine. It pairs exceptionally well with American barbecue staples, such as Texas-style smoked beef brisket, where the wine's dark fruit complements the smoke ring and the tannins cut through the rendered fat. Alternatively, serve this with braised beef short ribs over polenta, or a grilled bison burger topped with caramelized onions and blue cheese.
