Description
Calyptra Gran Reserva Cabernet Sauvignon 2019
This distinguished wine is a pure expression of 100% Cabernet Sauvignon, sourced exclusively from the producer's unique "High Andes" vineyards. Located in the Alto Cachapoal Valley, these vines represent some of the easternmost plantings in Chile, sitting at an impressive altitude of approximately 1,000 meters (3,280 feet) above sea level. The 2019 vintage in this region was characterized by warm, dry conditions that facilitated excellent ripening, resulting in fruit with remarkable concentration and varietal typicity.
The terroir of the Coya foothills is defined by alluvial and colluvial terraces rich in calcareous deposits and volcanic rock. This poor, mineral-rich soil, combined with the significant diurnal temperature shifts of the high altitude, allows the grapes to develop thick skins and intense aromatics while retaining vital acidity. The result is a wine that balances the power of the warm 2019 growing season with the fresh elegance inherent to mountain viticulture.
In the glass, the wine presents a deep, intense ruby color with striking violet hues, indicating its youth and concentration. The nose is complex and expressive, offering a bouquet dominated by ripe black fruits such as blackcurrant (cassis), blackberries, and dark cherries. Layered beneath the fruit are classic Alto Cachapoal herbal signatures, including subtle notes of menthol, eucalyptus, and green peppercorn, interwoven with secondary aromas of tobacco leaf, cedar, and sweet spices like clove derived from extended oak aging.
On the palate, this Cabernet Sauvignon is full-bodied and dry, showcasing a structure that is both powerful and refined. The texture is velvety, with firm yet polished tannins that provide a sturdy backbone without being aggressive. Flavors of graphite, dark chocolate, and roasted coffee bean complement the core of black fruit, leading to a long, persistent finish marked by a refreshing streak of acidity. The balance between the ripe fruit profile and the savory, mineral-driven complexity is a hallmark of this high-altitude site.
Calyptra employs a philosophy of minimal intervention and sustainable farming to protect their unique ecosystem. For this Gran Reserva, the winemaking process is meticulous: grapes are hand-harvested and moved via gravity flow—avoiding the use of pumps to preserve the integrity of the fruit. The wine undergoes a cold maceration followed by fermentation and an extended post-fermentation maceration. It is then aged for a substantial 24 months in 225-liter French oak barrels, followed by an additional 12 months of bottle aging before release.
This structured red pairs exceptionally well with rich, protein-heavy dishes that can stand up to its tannins and acidity. It is an ideal match for a grilled ribeye steak served with a fresh chimichurri sauce, as the herbal notes in the wine echo the parsley and oregano in the condiment. Alternatively, try it with slow-braised beef short ribs or a rack of lamb with a rosemary crust, where the wine's depth will cut through the fat and elevate the savory flavors of the meat.
Critics have consistently praised Calyptra's "Gran" line for its exceptional value and distinct character, with publications like Descorchados frequently awarding the winery's Cabernet Sauvignons scores in the 90-94 point range. This 2019 vintage stands as a testament to the potential of Alto Cachapoal, offering a level of sophistication often found in much more expensive bottlings from the Maipo Valley.
